Slow Cooker Chicken and Pumpkin Curry
This is a nice curry for a cool day.
Add to the slow cooker
Rinse till clear 200gms each of red and green lentils
Thinly dice and sauté 1 brown onion
Dice 1kg of chicken thighs roughly
Dice 500gms butternut squash
Dice 500gms potato
2tsp ground coriander, cumin
2tsp mustard seeds
1tsp tumeric
2 chopped green chillies
1 400gms tin diced tomatoes
2 crushed garlic cloves
1 litre of chicken stock
Cook for 7 hours on low
Before serving add 1 can coconut cream and fresh baby spinach leaves
Ensure heating through before serving with rice and coriander
