Vegetarian Stuffed Pumpkin


This is a fun winter dish, you will need a little pumpkin.

Cut the top off the pumpkin and scoop out the seeds.

Spray with olive oil and oven bake ay 180c for 20 minutes

Saute
Diced onion, carrot, celery, garlic, lentils in olive oil.

You can of course use any vegetables you have to hand or fancy for the filling.

Fill the pumpkin with the vege mix and cover with grated cheese.

Return to the oven for approx 30 mins and serve with rice.
