German Sausages with potato dumplings


I love authentic German sausages. Thanks to Rudi's a great butcher these are readily available.

I combined this delicious meat with sauerkraut and potato dumplings.

The sauerkraut I bought and heated with some spring onion and caraway seeds.

For the dumplings I boiled 4 potatoes in their jackets and allow to cool.
Then peel the potato or if you are lazy like me use a ricer.
Combine with diced chives and butter, add flour 1 egg and mix into a paste
Roll into golf ball sized dumplings and refrigerate.

Into boiling salted water drop the dumplings when they float they are ready.

Having a saucepan full of juices from the sausages I coudn't help but fry the dumplings.


Stuffed Zucchini

A simple vegetarian dish, tasty and fresh.

Take 2 zucchini cut into half and scoop out the flesh.
Dice filling and combine 1 thinly sliced spring onion
Mix with goats cheese and with blue cheese.
Fill the shells and place in a hot oven until cooked.

Sizzling Sichuan Pork











Marinate 500gms of pork in
2tbs light soy
2tbs Shao Xing wine
1 tsp dark soy
1 tsp cornflour
Pinch of brown sugar
Salt
Ground Sichuan pepper
2 minced garlic cloves

Take 200 gms of beans
2 bunches of asparagus
Blister in oil in a very hot wok and set aside

Cook the mince in the hot wok
Add the beans and asparagus
Stir through 1tbs xo sauce

Serve with rice and cashews

Fish Pie











A traditional dish, tasty and straight forward to prepare.

Start by boiling your potatoes for the mash to top the pie.

Take a greased baking dish.

Add firm white fleshed fish cut into chunks (i used monk fish)
A handful of peeled prawns (frozen is fine)
A generous quantity of peas

Mix equal amounts of sour cream and milk with 1 tsp of corn flour and poor over contents.

When the mash is ready use it to cover the contents, top with tasty cheese

Oven bake at 180c for 40 minutes.

Pork Cabbage Rolls



A simple idea for when you are stuck as to what to prepare for tea.

Start with some flavoured pork sausages strip them of there casings and place in a bowl
To this I add my flavouring
1 Diced onion
2 tsp diced garlic
2 tsp chilli sauce (I used peri peri)
Combine well.

Boil a large saucepan of water

Take a cabbage and strip of the leaves taking care to keep them whole
Blanch the leaves briefly in the boiling water till soft drain and set aside.

Place a spoonful of the pork mixture onto a cabbage leaf, roll and place in a greased baking tray.
Repeat until tray is full or you un out of mixture.

Cover with pasata , generously top with cheese and oven bake until golden at 180c.


Beef Paprikash


This is a simple but hearty stew I serve with olive oil mash.

Brown 500gms of diced steak remove and set aside
Saute 2 diced brown onions in olive oil
Add 150gms sliced mushrooms and more oil if needed
Add 3 tsp of hot paprika
500mls of beef stock
Stir in 1tbs Dijon mustard
2 tbs of sour cream
Return the meat and simmer gently until beef is tender

Serve with olive oil mash and baby green beans

Corn Beef Hash Patties



  • I love cold corn beef sandwiches, but often I don't eat all the corned beef. What to do here is a simple idea.
    1kg Potatoes, whole, unpeeled, boiled mashed and allowed to cool350g sliced corned beef, roughly chopped2 tablespoons wholegrain mustard1tsp wostershire saucecooked green spinach is ideal2 eggs, lightly beaten1 cup Plain Flour2 tablespoons rice bran oil
    Place the oil in a pan Place the oil in a frypan and combine the other ingredients (not the egg and flour)
    This could be cookedThis could be cooked as one whole as in bubble and squeak, but in this case form the mixture into patties and dip in the egg wash coat with flour and fry until golden.
    Serve with chutney or a fresh salad.

Maple Flavoured Pork Sausages

Straight forward, inexpensive and filling. What more could you ask for?

Start with a roasting pan.
Add potatoes cut into wedges and boiled.
Cut into quarters 2 red onions
Cut into quarters and core 2 apples (sweet ones are best)
Cut into chunks 1 red capsicum
Add 500gms of pork sausages I used chipotle but any will do.
I also added some good size pieces of fatty bacon.

Season with salt and pepper and drizzle with olive oil.
Turn regularly after 30 minutes add 1/2 cup of maple syrup.


Mushroom and Onion Lasagne


Start by sautéing 3 thinly sliced onions in olive oil until soft
Add 2 sliced garlic cloves
150gms of sliced mushrooms Until soft
Shred 1 bunch of silverbeet and wilt
Add one can of tomatoes and heat

Add a layer of pasata
A layer of lasagne sheets
Cover with ricotta cheese and some of the mushroom mixture

Repeat until dish is full

Then add some carbonnara sauce (no bacon) and a generous handful of cheese

Bake until golden.


Baked Salmon with Miso Rice


A simple dish but it has some lovely gentle flavours the idea came from Good chef Bad chef a good tv show if you want some different cooking ideas.

Take some boneless salmon fillets with the skin on
Place skin side down on a piece of aluminium foil.

Combine miso paste (I used sesame flavoured) with mirin, rice vinegar, sesame oil and honey.

Liberally brush on the fish
Top with Pak Choy and thinly sliced chilli
Wrap up the foil and oven bake at 180c for 15-20 minutes ( Can also go on the BBQ)

I served this with miso flavoured rice and oyster sauce fresh vegetables.


Kangaroo in Pastry with Blue Cheese

This is a simple dish but packs a lot of flavour.

Take marinated kangaroo fillets on a sheet of puff pastry

Apply sauce and a generous chunk of your favourite blue cheese

Wrap up the parcels spray with oil and oven bake until golden.

Sauce:
A generous handful of sun dried or semi dried tomatos
Fresh basil
Olive oil
1 garlic clove

Blend to form a paste

Baked Eggplant with Blue Cheese Dressing
















Cut the eggplant into thin strips spray with olive oil and oven bake

For the dressing combine and blend
Blue Cheese and tofu (you could use sour cream or yogurt)

A generous handful of sun dried or semi dried tomatos
Fresh basil
Olive oil
1 garlic clove

Blend to form a paste

Heat gently

Spoon over the cooked eggplant serve with hassleback potatos

Miso and Nori Prawns with Rice


Ingredients
6 x large prawns raw, shell and devein
4 Nori sheets

¼ cup mirin
3-4 tsp Soy Sauce
Salt
Pepper
1 tbsn Miso paste
1 tsp ginger, grated
1 tsp garlic, grated
Peanut Oil
1tbs lime juice
1tsp brown sugar
½ bunch coriander

Baking paper
Aluminium foil

Method
Lay the prawns on the Nori sheets.

Mix ingredients together and place on top of the prawns.

Place the prawns with the Nori sheets on baking paper and wrap in foil.

Bake 10-12 minutes at 200c
