Mustard Pork with Apple Mash











Mash:

Peel or scrub your potatoes (personally I prefer the skin on)
Peel and core 2 granny smith apples (1 per person is about right)
Cook apples and spuds together

Mash together with your favourite combinations of cream, butter, milk yogurt etc

Meanwhile Saute
1 sliced red onion
100gms of sliced swiss mushrooms
Slices of pork fillet or chops or steak
When cooked add 1 tbs seeded mustard
Stir through a generous amount of sour cream (NB do not allow to boil, taking off the heat is a good idea)

Serve with green beans
