Mushroom and Asparagus Tart


A light summery tart, quick and easy to make with whatever you may have at hand.

Take 2 sheets frozen  puff pastry (yes make your own if you wish) Thaw

Turn up edges to make a tray
Cover lightly with tomato paste mixed with crushed garlic
Top with vege
I used sliced mushrooms, zucchini, eggplant and asparagus

Top with crumbled goats cheese (you can use any cheese)
Sprinkle lightly with mozzarella cheese
Spray with olive oil
Bake at 180c until browned

Serve with crunchy bread and a green salad
