This is a lovely Indian dish.
Thinly slice 2 brown onions fry in mustard seed oil until soft
Add 1 thinly sliced green chilli
2 diced cloves of garlic
Fry off
1/2 tsp cumin seed
1tsp ground coriander
1tsp tumeric
Dice your eggplant into small pieces add to the frypan
Add about 1 cup of water
Cook until eggplant softens
Salt and add garam masala before serving with coconut rice.
