Mocked Mutton Bird
What is this you ask? Well it's actually a take on a beef olive. When I was growing up my family had this as one of our favourites but my mother who copied the recipe from a tv program never had its name, hence mocked Mutton bird. Its a fun dish and is a cheap alternative to a roast dinner.
Take 1 large piece of round steak flatten
Atop the steak place a number of slices of bacon, rind on
On top of the bacon spread a layer of sausage mince, around 300gms
On the very top place a hard boiled egg (without the shell)
Now we are going to roll this all together with the egg or eggs in the centre
Tie with string.
Brown on all sides in a pot on the stove
Then add 1 tin of diced tomatoes and 1 small jar of pasata and cook slowly for 30mins
At home mum would sometimes add garlic and onions to the pot as well.
Slice and serve (without String) on either rice or mashed potato
