Start with some diced onion sauté in olive oil
Scoop out the flesh of the eggplant and dice.
saute it with the onion, coat the eggplant with oil to stop browning.
Add some diced garlic and ginger.
Fill the eggplant with the saute vegetables
Add small tomatoes and cover with cheese.
Cook until golden.
