Chermoula Flavoured Eggplant


2tbs olive oil
1 eggplant sliced into 1cm sections
Cook in the oil placing the chermoula seasoning on the eggplant
serve on a bed of beans
1 400gm can of beans
1 diced onion 2 crushed garlic cloves
roasted capsicum
Blend half in a blender
Heat in a fry pan

Serve over a bed of rice, garnish with coriander
