Vegetable Roast











To hasten the cooking I par boiled the potatoes
Grease a baking dish and add the following
The potatoes
A quartered red onion
1 sliced zucchini
Florets of cauliflower
A handful of asparagus spears
Sliced mushrooms
Several garlic cloves
A scattering of baby tomatoes
Season generously with salt and pepper and drizzle generously with olive oil
Oven bake until golden
