Chicken Roll


Thinly slice a chicken breast and roll flat
Lay out most of the chicken on a cooking board
Cover the chicken with prosuto slices
Dice the remaining chicken and mix with grated Keflo graveiro cheese (Parmesan will do)
Cover the procutto with the chicken and cheese mixture
Roll the chicken breast up and tie
Baste with 1/3 cup olive oil and 1/3 cup white wine
Oven bake at 180c for 30 minutes.
