Eggplant Masala

Firstly create your own masala blend.

Add 2 red and 2 green chillies
1 tsp cumin seeds
1tsp fennel seed
1/2 tsp white poppy seed
4 tbsp grated coconut
2 garlic cloves
Blend until smooth

Finely dice
1 red onion
2 tomatoes
1tbs grated coconut

Saute in vegetable oil
Add masala for about 2 minutes
Add 1 eggplant cut into cubes
Add 100mls water
Cover and simmer for 20 mins

Serve with rice garnish with coriander and coconut
