Baked Eggplant


I think this is a really nice low fat dish. However when i cooked it:


  • 1/2 cup fat-free mayonnaise
  • tablespoon minced onion
  • lb unpeeled eggplant, sliced-about 12 (1/2 inch slices)
  • 1/3 cup fine dry breadcrumb
  • 1/3 cup grated parmesan cheese
  • 1/2 teaspoon dried Italian seasoning
  • vegetable oil cooking spray


  • I crumbed the eggplant and oven baked it.
    Then covered it with diced tomato and shredded cheese
    The result as below
