Road Kill Potatos


I heard this on an interview with Stephanie Alexander.

Boil up double the number of potatoes you would use for mash and leave the skins on.

Take an oven tray and cover with baking paper.

Crush the potatoes on roughly

season (salt, pepper and any herb or spice mix that you like)

coat generously with olive oil

bake until top is golden
