Eggplant Rollup


This is a simple recipe which can have any number of variations, use your imagination and have fun.

Slice two eggplants thinly
Spray with olive oil and oven bake until golden.

Saute 1 diced onion
1 diced bunch of spinach or silver beet

Allow the eggplant to cool a little
Spread with ricotta
Top with the onion, spinach mix
Roll and place in a baking tray

Cover with pasta sauce
Sprinkle liberally with grated cheese

Oven bake until golden
