Eggplant and Lentil Pie
Chargrill 3 eggplants sliced into 1 cm strips
Chargrill 2 Zucchini sliced into 1 cm strips
Mix 1 can diced tomatoes with 1 can lentils
Cut a butternut pumpkin into thin pieces
Line the bottom of a baking dish with a layer of eggplant
Cover with lentil and tomatoes
Sprinkle with cous cous
Place a layer of butternut squash
Repeat
Finish with a layer of mushrooms
the grilled zucchini
Pour 400ml of pasata and cover with grated cheddar cheese
Oven bake at 180c until golden
Brocoli and Walnuts
Cut 1 head of broccoli into florets (or use frozen)
Stir fry with
2 diced garlic cloves
1 sliced brown onion
2 sliced red chillies
season with
2tbs soy sauce
2tbs oyster sauce
When done stir through 2 tbs of honey and 1 cup chopped walnuts
Roasted Spiced Cauliflower
Cut 1 bunch of cauliflower into florets (or use frozen)
Drizzle with olive oil
Dust with:
2tsp ground cumin
1 tsp ground coriander
1 tsp chilli flakes
2 crushed and diced garlic cloves
1 tsp turmeric
Oven bake at 180c for 30 mins
Serve with lemon wedges and fresh basil

Vegetable Fritters with Haloumi and Kangaroo Fillet
To make the fritters:
a) Combine
1 tsp chopped garlic
1tsp salt
2tbs olive oil
2tsp ground cummin
2tsp ground corriander
2 tsp fennel seed
2 tsp chilli powder
170gm besan flour
1tsp baking powder
80gm potato flour
280ml cold water
Stir until it forms a smooth paste
b) Combine
300gm shredded baby spinach
15 torn basil leaves
1 grated zucchini (squeeze out water)
4 sliced spring onions
1 can drained chick peas crushed
Add both mixtures together and pan fry until golden and cooked through.
Meanwhile slice and fry haloumi
Pan fry marinated kangaroo steak
Serve on a bed of greek yogurt with lemon wedges.

Roast Lamb with Bean Salad
Marinate pieces of lamb in lemon garlic and olive oil
For Salad combine 4 bean mix (400gms)
Crumble 1 block of feta
Crunch 1 pack of corn chips ( yes its odd but works)
1 grated carrot
1 diced red onion
Combine salad and meat in pitta bread yum with greek yogurt and lemon!
Lamb and Lentil Rice
Cook some rice in vegetable stock
Add some cooked brown lentils
Sliced mushrooms
Chopped shallots
Coat lamb with a mix of
Flour, onion powder, garlic powder, cayenne pepper, salt
Then pan fry until golden
Pan fry slices of eggplant until browned top with cheese and melt under grill.
