Thai Style Fish Curry


Curry Sauce

In a blender mix
2 fresh chillies
2tsp of Sambal Olek
1tsp galangal
1 tsp diced lemongrass
1 tsp tumeric
1 tsp of tamarind concentrate
Splash of lime juice
Handful of basil leaves
Generous amount of fish sauce

Stir fry
1 red onion
Pieces of firm white fleshed fish ( i used ling)
Then add the curry paste and cook until fragrant
Complete with brown sugar and coconut cream (1 can)
