Spinach and Chickpeas


This is a nice and light supper dish.

Heat some olive oil in a pan
Add 1 sliced Spanish onion
Cut 2 cloves of garlic into matchsticks
Cut 1 red chilli into matchsticks

When softened add 1 can chick peas
1 handful of sliced mushrooms

Finally wilt several handfuls of English spinach
Add a dash of lemon juice and serve on white rice.
