Mexicana (slow cooker)

In your slow cooker combine

2 sliced brown onions
2 red capsicum
8 tomatoes quartered
5 celery ribs sliced
2 diced carrots
1 kilo of beef mince
1 400gm tin of kidney beans
1 can of chilli's in adobe sauce
season with 2 tbs coriander/cumin, salt and pepper
4 cups of beef stock

Slow cook for 8 hours and serve on a bed of rice
Garnish with grated cheese and sour cream
I serve with corn chips.
