This comes from Good Chef Bad Chef a really great cooking program on Lifestyle Food.
Steam 4 Flathead fillets cool.
Cook 1 cup of quinoa cool.
Mix 2 tbls of Miso paste
1/3 cup tahini
Juice of half a lemon
Flake in fish and mix well
Lay 1 piece of mountain bread (or any flat bread)
Cover with a sheet of Nori (seaweed for making sushi)
Place fish mix and some quinoa on nori and roll the whole lot up.
This is very nice when toasted under a sandwich press.
