Vegetable Fritters with Haloumi and Kangaroo Fillet











To make the fritters:
a) Combine
1 tsp chopped garlic
1tsp salt
2tbs olive oil
2tsp ground cummin
2tsp ground corriander
2 tsp fennel seed
2 tsp chilli powder
170gm besan flour
1tsp baking powder
80gm potato flour
280ml cold water
Stir until it forms a smooth paste

b) Combine
300gm shredded baby spinach
15 torn basil leaves
1 grated zucchini (squeeze out water)
4 sliced spring onions
1 can drained chick peas crushed

Add both mixtures together and pan fry until golden and cooked through.

Meanwhile slice and fry haloumi

Pan fry marinated kangaroo steak

Serve on a bed of greek yogurt with lemon wedges.
